  • hello from australia, mayu i ask, why does your pasta dough seem so yellow and full of flavour, is it the eggs you use, please, my pasta seem to lack flavour and yellowness.

  • @wazfrmoz

hello, wazfrmoz here in Italy we have got a special selection of egg that are more yellow than the other. you can replace some of the eggs with the same quantity of egg yolks. Let us know!

  • Chef,

Quante uova ti metti per persona? How many eggs do you put per person? Thank you.

  • Mettiamo un uovo per 100 g di farina, puoi considerare circa un uovo a persona.

We use one egg for 3 oz of flour, you can consider about 1 egg for each person.

  • chef is that regular all purpose flour? or double 00 flour?

  • @bigtonutz all-purpose flour is ok!
