A great Thanksgiving side dish, or an easy side for any dinner dish!
Recipe:
1 large yam cubed
1 1/2 cups low sodium chicken or vegetable stock
1 tsp chile powder
Juice of 1/2 lime
1/2 cup chopped cilantro
Cook yam on stove top for 10-12 minutes or until tender. Drain potatoes, add chile powder, squeeze lime and add cilantro. Salt and pepper to taste! Serve warm, or cold in your salad!
