STEPS:

1) Dowload the iOS 5 IPSW and iTunes Beta 10.5 (description)

2) Install iTunes and plug in your iDevice turned on

3) Power it off and wait for screen to be completely black

4) Hold down power+home for 10 seconds. Without letting go of home release power, but hold home from 15 seconds

5) You are now in DFU mode. You should get a popup saying you must restore or whatever just click ok. If you are running Windows hold down shift and click restore (Mac hold down control and restore)

6) Find the IPSW file you downloaded and double click it. Let your iPod do its thing for 5-10 minutes

7) When it boots set it up and check out the new features!
