how do you cook them or do you smoke them ?

@tarzwell50 We smoke and cook them in a smokehouse. They are hung inside the smoker, smoked for 3-5 hours and then we bring the temp. up in the smoker to 165F and hold until the sausage reaches 152F.

@JogBird Not necessarily...these sausage sticks aren't being sold to the public, only enjoyed by friends/family and my hands were thoroughly cleaned with anti-bacterial soap prior to stuffing/linking, multiple times.
