it's possible to take somebodies dogtags in mid air: when ejecting from a jet flying up straight, you get are boosted in the direction the jet was flying. during your way up, you are able to fully use your weapons (including knife)

another way is to use the knife while in parachute mode (don't know if this counts as midair)

ps: i have achieved a knife kill in mid air once from exiting a yet
