I have to admit, when I was a kid, I was pretty gravy-obsessed as well.

@werewasyo I know this is an old post but still, no he's not. As long as you clean the cast iron correctly (not with soap and water, watch 'steak your claim') then the seasoning will be fine. You should re-season once a year anyway, so even if you did ruin it, you could just re-season and life will be good.

I didn't believe the combination of olives and raisins would work. So I got some out and ate an olive, then ate a raisin. Then noticed they strangely DO work! So I ate a few more, and now I'm gonna make my next pot roast with them.

@boblabon Chopped dates, figs, peaches, apples, etc. It would depend on what your particular tastes are. Mr. Brown makes this seem so easy, as if he just gathered what was in Chuck's meager stores and threw it all into a pan. I'm actually hungry for pot roast now! (I'm surprised Chuck had balsamic vinegar. He's chopping up an onion with a switchblade knife so where did he get balsamic vinegar?!)

it's funny, the comments sections on foodtv network for this recipe is full of ppl complaining that the meat is too tough... because they didn't cook it long enough. it's really worth watching the episodes for all the tips and tricks rather than just going by the recipe. the scientific and explanatory information is what makes the show great anyway (that & ab :)
