How to encrypt locally stored Thunderbird email. Make sure after creating the new profile you select it (click it) and click the start Thunderbird button. Also I think I called my User folder "my documents", sorry. The folder after "User" is your user folder.

You can also just download portable Thunderbird and toss it in a Truecrypt volume.

A little warning, if you create a profile be careful if you decide to delete it. I somehow deleted my documents folder during a take of this video (had the fake profile stored in my documents). Was probably the Thunderbird profile manager thinking the documents folder had profile stuff in it. I'd say manually delete it and then remove the entry from the profile manager if it's still there. It does give the option to not delete files when deleting the profile.

Managed to get everything back with Recuva, system restore, and a back-up, but thought I'd let you know. A good time to remind everyone to back-up regularly.
