  • How long does it smoke on each side? Once smoked, how long do you think the fish would last? It seems like a great way to prepare meat in places where refrigeration is scarce.

  • They smoke these over a period of days. The fish lasts many months smoked. The flavor is a bit strong at first, but it grows on you. Typically you boil the dried fish in water to make a soup or stew. Fresh fish only lasts hours in the climate here, so this is definitely the only viable solution without electricity.
