Qalantiqa - Polenta:
An allusion to sacred songs, where the spiritual is marked by popular wisdom and humility. Presented in the guise of the poor man's dish "Qalantiqa" a type of Oran-style custard tart (also known in Algiers under the name "Carentita"), based on powdered chickpeas and eggs. Musically, it features the chaâbi mode (popular in the casbah), a veiled reference to the East through the qanûn-zither and a finale in the form of daqqa marrakchia (frenetic hand-clapping).
Allusion aux chants sacrés où le spirituel est empreint de sagesse populaire et d'humilité. A l'image de ce plat du pauvre qu'est là "qalantiqa", sorte de flan oranais (que l'on connait également à Alger sous le nom de "carentita"), à base de poudre de pois-chiche et d'oeufs. Musicalement, on retrouve le mode chaäbi (populaire de la casbah), un clin d'oeil à l'Orient à travers le qanûn-cithare et un final sous forme de "daqqa marrakchia" (battements frénétiques des mains).
