@moonriver1055 Well, I'm sure u can't have BEEF BROTH OR STOCk either; so-- I'd use substitute like all tomatoe juice or veggie juice thinned with a a few cups of hot water ... and omit the meat all together. :) Try playing with the recipe to see what you can come up with. I'd add Gluten Free pasta to it if I went meatless. Adds a bit of texture that way. Merry Christmas to you too, dear!
This is the one of a few I was watching yesterday. I could almost smell it through the monitor:) Good tip on the chili powder..it makes sense when you think about it; but guess I never thought about it that much. lol. It has such a beautiful color to it. I would need to adjust this to a vegetarian version or my son wouldn't even come near it. LOL.If I did be honest how do you think it would turn out? Need to send this to Sis. No vegetarians in her house:) Merry X-mas again.
oh-- and I bet tofu would be good in this instead of meat if you're a veggie! Soaks up the flavor of the veggies and gives substance.
