Eye of round is one of the most impressive cuts of beef in my opinion. It works so well in so many recipes, and is pretty much the leanest cut of beef in the world as well, not to mention the really low price.... Hard to beat all those benefits. Obviously if money is no issue I'd rather have me a top sirloin or somethin' but eye of round is still the bomb.
