I believe it is old Scottish/ Gaelic or English (?) mixed with Latin, from the Middle Ages.

Brilliant! When was this recording made? I would love to know the names of the altos so I can look for them on further recordings. (especially the bloke with the specs on at 0:54-1:00. His solo on Ubi Caritas was breathtaking).
