  • I like that Kudzu song. Too bad though it can't be trained..it's actually a pretty cool plant. Got it in my back yard, and it can with just a breeze hop from one side of the yard to the other. Anybody know where you can find recipes for it, or where I can find that book? If I can't kill it..I'll just eat it..LOL

  • @radstorm You can substitute it into any recipe that involves cooked spinach. Just be sure to use the young leaves and pick them where you know the plant has not been sprayed with herbicides or anything else for at least 5 years. Our favorite recipe is kudzu quiche.

  • I cook up the young shoots just like asparagus, and they're pretty tasty. I also cook up the younger leaves with a little bit of ham just like collared greens or curled dock, and that makes for a great side dish. I haven't made the syrup or the jelly yet, buy I'm planning on making enough this year to get through the winter.

    If you are new to this, be sure not to use kudzu from any areas that have been sprayed by the county. Lord knows there's plenty of fresher and safer kudzu around.
