J Jean's Chocolate Chip Cookies
This recipe combines two of my favourite recipes. The oatmeal gives a bit of texture and the brown sugar gives a chewier cookie and a bit of darker colour -- hope you like them too!
Makes 4 -- 5 dozen cookies depending on size.
Cream together until well-mixed and lighter in colour:
1 cup unsalted butter, cubed, slightly softened
¾ cup granulated sugar
¾ cup packed brown sugar
1 ½ tbsp vanilla extract
Beat in 2 eggs just until well combined.
In a separate bowl, mix the following:
2 ¼ cups all-purpose flour
½ cup quick cooking oats
1 -- 1 ½ tsp baking soda
½ tsp salt
Add the dry ingredients to the egg mixture, stir just until combined.
Add 2 -- 3 cups semi-sweet chocolate chips (or 2 cups chocolate chips, 1 cup chopped nuts).
Drop into 1" round spoonfuls onto parchment-lined cookie sheets. Use a dough scoop for even sizes and best results.
Bake @ 350F for 10-12 mins or until lightly browned and almost set in the middle.
Cool on the cookie sheet on a rack for 3 -- 4 minutes, then slide off the cookie sheet to cool completely.
