  • The fat is the flavor, leave it on while cooking and you still skim it off later ;)

  • Something that gives it a lot of flavor is to cook it with a chicken foot (and then remove it when done cooking). It sounds weird, but it really adds a lot and many recipes include it.

  • @gerwiseman I know this is way late comment since this was recorded...but you can slaughter your own chicken so you can get the feet or go to any store in china town one of them is bound to have it hope this helps :)

  • lol, I like what you did. It looks good,too. I will also add rutabagas and turnips to my soup as well. But the real secret is I also add 5 allspice berries to the stock. I remove them when I need to or else i can just use a pc of cheesecloth when making a bouquet Garni' . Have a nice day.
