If you wanna do it in actually ONE single hit, you probably wanna use a two-hander. I've seen my flatmate do it in two hits with a daedric 2-h axe, in master mode. He has not maxed enchanting yet, and hasn't done much alchemy, so he is probably going to be able to do it eventually.
My character is basically a caster, so, well, I need more hits but I don't need to chase them anyway.

In before morons start posting that dual wield power attacks aren't one hit. Also, you can do this with war axes too... just need to craft the best weapons possible. enchant +28% smithing on 4 items, wear them, use a blacksmith's elixir, then improve your weapon to ridiculous levels. Some people exploit to make their weapons even more powerful but the legit way is plenty powerful.

@snagillim Yeah it's not that hard to achieve, and probably you are right and this couldn't be considered as one hit.
Even though it's easy as hell to get more damage because I wasn't using the best potions/poisons and the enchanting bonus.
Maybe I'll try to figure out how to actually do it with only one hit with only one weapon, that would be far better.
