http://www.makeraw.com | Wow! I'm in the process of creating ice creams, slush's and amazing sauce toppings and one of the by-products of my recipe development is coconut meat. For a pudding sweetened with date syrup instead of agave, check this out; http://www.youtube.com/watch?v=JVyl5uRgH1Y

So I tossed some raw coconut meat into a small bullet with the spice blade and added a tablespoon or so of raw cacao powder, a couple pinches of salt...not too much...and enough agave syrup to get the whole thing mixing.

After setting in the fridge this is what you get. The fluffiest, most amazing tasting pudding, mousse...what ever you want to call it.

I just call it a dream and can't wait to hear what you think when you make it at home.

  • uh-oh---i just saw this one---:) I'm going to have use date syrup too--I don't care too much for the agave syrup....but wow--this looks really good---Mark--are you a trained chef? You have some of the best ideas and recipes out here on YT--thanks again!

  • @tamellaoc My pleasure!! Yes the 'date syrup sweetened' version is fantastic as well. More chocolaty and less sweet but soooooo good. I'm addicted. And I have so much coconut meat left over from the coconut snow experiment. To answer your question, I became a certified raw food chef in Vancouver BC last year and have been using the Flavor Bible to inspire my creations. :) more on makeraw dot com

  • its all your fault !! now i have to drive to dallas and get a coconut. a dear friend sent me the cacao powder. i will explode if i really get cholate pudding after a year of losing wt. with this raw food lifestyle. you may hear me squeel from there. waves~~

  • @crosspecans I was blown away by the results and can't wait to hear how yours turns out. I'm experimenting with date syrup as a substitute sweetener for agave syrup. Date syrup is just the water I soak my dates in so that means lower on the glycemic index than agave and 100% natural.... no processing. Cross your fingers.... if it works you'll see it first right here. ;)
