'火锅' (huoguo), translated from Mandarin as "fire pot", is a feast for the eyes as well as the taste buds. On this occasion, my Lanzhou friends took me out for lunch, where we feasted on a vegetarian spread of over 20 different items, including tuber, tofu, and quail eggs. The pot has an inner well of plain broth, surrounded by a moat of [very] spicy broth - vegetables are dropped into the broth and pulled out after a brief boil. Delicsh!
