Dolphins aren't humans, obviously. You mustn't compare two different species so easily - most people get wrong ideas about other animals from doing that.
Anyway, dolphins don't get erections by accident, as they have control over the mechanisms and can even ejaculate on will.
Showing their genitals like this is a widely used semantic element in dolphin communication and informs of a conflict situation that revolves around dominance. Since dominance is tied to sexuality, it is a clear symbol.
