The one problem - the explosion is too small. Remember, Federation starships carry significant quantities of antimatter, both for their warp drive and as part of the warheads in photon torpedoes. If a starship was destroyed, even by a (relatively) low-power strike from the Death Star, you'd have a much more energetic explosion as the antimatter was released from containment and encountered normal matter.
