    (Cont) so it does get really complex and you are right that hormones (especially insulin and glucagon) are at the heart of all this. There is a trade off between making things accessible and accurately detailed. I just hope that people take on board that hypoglycemia can drive food cravings and that they should eat food as delivered by nature and not as delivered by food manufacturers. If that is taken on board, it will be worth it for their health!

    Hi there - you are right that this is kept as simple as possible for a youtube video and metabolism is highly complex. You are also right that the body recognises the monosaccharides from the carb, rather than the carb itself, just as it recognises fat and protein as distinct from carb and then the type of fat and amino acids etc. Other than oils (pure fat) and sugar (pure carb) most foods have more than one macronutrient and these are broken down in different ways...
