To be Altair in AC 2 you need to sign into U-Play and complete some of the challenges, which earn points. You can spend 30 points on Altair's outfit in AC 2. To access U-Play press Y (Xbox) or Triangle (PS3) while in the start menu of AC 2.

Knife
Mace/Broom ^_^
Two-Handed Axe/Sword (disarm a Brute)
Spear (disarm Seeker)
Broken Spear (Counter Kill a Brute with a spear)
