You DO have to put the salt in there, it restricts the growth of Yeast. If you don't put salt in your bread might rupture on the side or might be lighter than you wanted.

How important is it to have that exact type of yeast? I've tried making this bread many times and usually it doesn't rise. What's the best yeast for this recipe?

This was my 4th and best bread recipe yet! Thanks! My only recommendation is that u definatly add 1 -2 tsp kosher salt..

When I slit the top of my loaf it flattened out. In your video it seemed to maintain its shape? Any advice?

@timluns How long did you let it rise? If it stays too long then it will flatten...
