Here here ope...sometimes people who've been brewing for a long time, no matter their grasp of brewing science or methodology, consider themselves experts. I've ran into lots of 'old timers' who read a brewing book once in the 80's and never looked back, and trust me there's no changing them.
I don't want to be negative, but if Flavio is a 20 year brew master, hasn't he had enough time to put together a decent mashing process?
Or the proper false bottom for a rectangular vessal? That had to lower efficiency. Why not mash IN the insulated cooler, to better maintain temps, instead of just using it to sparge?
And there was PLENTY of room in that cooler for an all-grain, suggesting that all-grain isn't reasonable at the homebrewing level is simply false.
