In this video, Betty demonstrates how to make Company Coleslaw. This version of coleslaw is quick and easy, but it gives dramatic results. You may use fresh shredded cabbage (or pre-packaged), add some mayonnaise, crushed pineapple, and marshmallows, and you have a delicious coleslaw worthy of serving to company!

Ingredients:

4 cups shredded cabbage (I used pre-packaged shredded cabbage that had shredded carrots. You may use a fresh head of cabbage and chop or shred it, if you prefer.)
½ cup mayonnaise
½ teaspoon salt
½ cup miniature marshmallows (You may use large marshmallows and cut them into quarters.)
8 oz. can crushed pineapple, drained
1 tablespoon pineapple juice
pineapple chunks for garnish (optional)

In a large bowl, combine 4 cups shredded cabbage, ½ cup mayonnaise, ½ teaspoon salt, ½ cup miniature marshmallows, 8 oz. drained crushed pineapple, and 1 tablespoon pineapple juice. Mix thoroughly, and then spoon into a nice serving bowl. Place a few pineapple chunks on the top for garnish, if desired. Cover with plastic wrap, and refrigerate until ready to serve. The mixture may seem dry, but it will become creamier as it chills. I made this coleslaw the first time I had my in-laws over to dinner after I was just married (in 1970), and I've been making it for the past 40 years. Its always a delicious change from the normal vegetable coleslaw! I hope you like it! Betty 

  • I don't like the taste of mayo... can i sub' it out for thousand island...!?

...Or... what else would you recommend...!?

  • @Athrun000 Yes, thousand island is good, or you might choose plain yogurt with this recipe.

  • Doesn't it defeat the purpose of 'homemade coleslaw' if you have to buy the bag of 'coleslaw' at the store?

  • @Lynnphotos84 This is just an option (which many people prefer). If you want to shred your own coleslaw, of course I have a video for that, too. Just search for cabbage carrot salad with dressing. It's home-shredded coleslaw with homemade coleslaw dressing. I hope you understand that I need to meet the needs of a lot of different people, and therefore there will be a lot of cooking styles. Thanks for your comment!

  • Hi Betty, I just love all your recipes. I made the Cole slaw today and absolutely love it. It was so easy to make. Actually, I made the catfish fillet, hush puppies, and green beans too :). Thanks so much.

  • Thanks for your wonderful feedback! I appreciate it so much!

  • Hi Stephanie! Thanks for your lovely comment! I use low fat/low sugar in all my cooking at home. I like to use it on youTube, but some people prefer the regular full fat and full sugar. I do a little for everyone... Thanks for your nice comment!
