Best freshly hand-made noodles I have had in Melbourne!

You walk in, order a plate of hand-made noodle with lamb, you see an old lady start to pull and stretch a ball of dough into long thin strands - and that's what will be in your mouth later.

Ayiguli Xinjiang Noodle shop located on Swanston st, right at the corner of little lonsdale. Small shop and nice friendly staff.

About Xinjiang:
If I'm not wrong, this dish originated from Xinjiang province at China, the one that borders Russia, Mongolia, Kazakhstan and others. Therefore, this dish - so as the province - has a very strong mixture of cultures. A Russian friend of mine tried this dish and she was very surprised how it is similar to their home food (however not entirely) and would never have guessed that it was a Chinese dish.
