@Edukah ... Gratin is a word used to describe any casserole dish that is topped with a brown crust (usually cheese) and has a creamy consistency mixed with the vegetable. Potatoes au gratin are popular in the United States.

Yes, you can do this recipe without cheese, prepare the white sauce just with milk, pinch of salt and corn flour. The result will be delicious!
