For this tasty Curry Couscous Salad this is what you're gonna need...

2 Cups Low-Sodium Chicken Broth
1 Box Couscous
1 Tbs. Curry Powder
¼ Cup Finely Chopped Scallions
½ Cup Carrots
1 Cup Cucumber (or one whole cucumber)
1 Cup Chickpeas
½ Cup Roasted Red Peppers (I use the sliced ones in a jar, always keep them on hand!)
Juice of 1 Lemon
¼ Cup Olive Oil
Now I LOVE garlic & cayenne but you can use as much or as little as you like!
2 Tsp. Garlic Powder
2 Tsp. Cayenne Pepper
1 Tbs. Parsely
Big Pinch of Salt & Pepper

Start by bringing the chicken broth to a boil in a medium saucepan. When it's boiling, add in the couscous and curry powder, stir to mix, cover with a lid and turn the heat off. In only 5 minutes all the liquid will be absorbed and the couscous will be perfectly cooked! While the couscous is cooking, chop the scallions, carrots and cucumbers. When the couscous is done, fluff it with a fork and transfer it to a large serving bowl. Stir in the rest of the ingredients and top with the chopped cashews. All done! Now get ready for an awesome summertime picnic and the tastiest curry in a hurry couscous salad! Oh and don't forget your great friends like soundlyawake and JoeNationTV
