Where do you work that you have equipment like that? I'm guessing in the military, on a cruise ship, or a casino.

Hi Ertznay,
we are a Polytechnic in Dunedin New Zealand for cookery students levels 3 through to Trade cert. The equipment is fairly standard, found in any larger hotel kitchen but the techniques shown can be replecated in smaller amounts in all catering outlets.
