Jason and Natasha cleaning sea urchins for dinner

http://www.TheKiteLife.com - One of the few occupational hazards in Paros for kiteboarders are sea urchins. On this day, we used gloves and pokers to sweep up the sea urchins close to shore. From these urchins, you can scoop out some tasty meat from the inside. Its not much per urchin, but when you have a whole bag full, you can get enough to add to pasta sauce to create a tasty seafood dinner.

Cut it the other way through the middle (teeth down) then shake each half once or twice like a wet dustpan brush and you should be left wth the roe only.. 2 on 1 half and 3 on the other, then shell it in to a plate
