Lol 'Chinese 'cheers'. I like that, but to your question, I's just exaggeration for effect. Like in the movies where they take off their glassless before saying something really important, adds to the overall drama, or in this case drunkenness.

I wonder who actually throws their head and shoulders back like that when they drink? I'm a bartender and have watched some pretty epic methods of throwing back a cup of booze, salutes, big throw's that wind up flipping the chairs, competitions and downright foolishness, but that seems way overboard, it's like trying to drink upside down...is it like a Chinese "Cheers!" or something?
