Uncle Buck's BBQ Food Challenge

Buck Gardner honed his cooking skills by hosting barbecues in his back yard.

The owner of Uncle Buck's Barbecue, located at 361 W. Main St. in Plymouth, perfected his recipes for ribs, brisket, pulled pork and smoked turkey at home on Sundays, he said.

"I always enjoyed it," he said.

He made his own meat smokers as well. The first was a 55-gallon drum with a pipe connected. One resembled a wooden outhouse. Another he made from an old refrigerator because it was well insulated.

He uses a commercial smoker in the restaurant, which he installed by cutting a hole in the kitchen wall. The top of the smoker is lined with spices, and a faint smoky smell permeates the kitchen.

He uses three kinds of wood, hickory, cherry and maple. Some meat is smoked for up to 12 hours.

"If you cook them too fast, they get tough," he said.

Gardner said he decided to open a restaurant after he got laid off from his job. He and his wife Dawna chose a property in Plymouth because it was the best location for the best price, he said. The couple lives in Dallas.

The building was formerly House of Wings, Gardner said. He made some changes to the inside of the restaurant, moving the booths to open up the dining room more and provide a better view of the fireplace.

"Basically everything was here," he said. "We just redid it all."

"I really never wanted a bar with a little restaurant," he said. "I wanted a restaurant with a little bar."

The tools on the wall and wooden tables give it a rustic feel, he said. One wall is decorated with a painting of Gardner wearing a straw hat, standing next to a pig's head with a cigar in its mouth.

Several members of Gardner's family, including his father, mother, father-in-law, sister and nieces, work at the restaurant. Their help and support was essential in getting the place off the ground, he said.

"My family and friends were here almost every day and expected nothing."
