  • Thanks all for all the comments good or bad. This video was primarily made to have a video library for my staff on how I would like to have it processed. I know there may be other ways or better. But for those I have under me I need to have a clear fundamental understanding. This video is not mention to challenge those butchers who clean tenders all day long. Best regards to all those who can do better and hope this helps others to get better

  • Nice job. Not really sure why someone would complain about how you trimmed this up but I would like to know. I've trimmed thousands of tenderloins at 24 and I have to say this looks pretty much like what I do. The only thing is, I would love to know what kind of knife that is. I use a large rage of different high quality knives but i am always looking for something new. Thanks.
