Hes supposed to be like a supernatural being aka a fictional character like dracula the urn gave him powers and when it was stolen by the million dollar mans corporation he got his powers by the creatures of the night. Being buried alive and put into a casket made him stronger and made him different like changing forms which is why when he was the american bad ass and human buried by kane he changed to the old school undertaker so he could beat kane. it's called career progression. Undertaker's job from burrying victims, into opening his own business of making cascades, died as human, with his soul turned into lord of darkness, died again and his soul reincarnated as bad ass biker gang who is also a big fan of Limb Bizkit, wrestlers few rounds with Booker T as proud American, later killed again by Kane, reborn as classic undertaker again. A bit up and down, I will say.
