while gliding, pull the analog stick backwards. or if you're meaning the little hop thingy at end of the glide, press triangle.

I noticed a few swimming in the air glitches before. My fav is going from Charmed ridge and saving Spyro's life and then going to Dino Mines and finding that unknown area.
