I worked for Wolfgang Puck for 14 years and in the restaurant business for 25 years. I found a simple method for controlling food cost. It may seem like common sense but it works. I have only known a few chefs who approached it this way. It's the 80/20 rule applied to food cost control.

  • I'm really surprised by how many views this video has received. I am currently working on an online class with video tutorials on how to use a simple excel spreadsheet to implement this system. I'll post here when it is finished. It will be on my site.
