蔥油餅(下) (Step by Step食譜)

【材料】:中筋麵粉1斤、豬油3大匙、蔥1/2把、鹽1/2小匙
【做法】:
1、先做好燙麵,也就是以3杯中筋麵粉加入1杯熱開水和開,再倒入半杯冷水,調和成糰。
2、放入抹了油的塑膠袋中醒30分鐘,就成了燙麵。
3、蔥切成末,灑上一點鹽。
4、把醒好的麵糰,做成一大片,上面鋪上豬油、鹽、蔥末,捲成長條。
5、以虎口捏緊,扭下分成小塊,直立壓扁入鍋煎透。
6、最後再轉餅:將蔥油餅旋轉擠壓一下即可。

    确实是这样,好吃的东西不一定要贵,事实上大多数好吃的东西都不­贵,因为好吃所以才能批量生产。比如说猪肉。

  • @alfaexpress Actually... one 斤 is half a kg, you're thinking 公斤.

    500g plain/all-purp flour, lard (or oil other than olive) 3 tbl spn, half a bunch of Chinese shallots, half tsp of salt.

    Stir flour with 1 cup boiling water, follow up with about half cup of cold water, knead until it's a 'ball', put in plastic bag with oil for 20 minutes.

    Spread into one giant pancake, smear with lard/oil, sprinkle chopped shallot liberally.

    Roll into tight sausage and break into chunks, flatten, fry.
