For what it's worth i Play a birch starclassic. I thnk any top notch drum in birch will give similar results, the hardware is what varies.
Brich is a quieter and less finiiky for tuning than its maple cousin. Oh if you can send a pic of your set up from the top down to see your foot location I might be able to help your leg tension thing.

I assume you're talking double bass drum? there's nothing wrong with the heal up technique even though with both heals up you can't support your natural 'sitting' weight, which is why your legs are tensing (you have no real stability on your butt).
Try holding your feet just skimming the footplates for as long as you can, during a warm up for example, try to build up the muscles needed by suspending them more and more each time.
If you can support your legs that way you'll find less tensing

That's one idea but I know different drummers achieve relaxation different ways. Another idea would be to develop mama dadas so your legs are only working half as fast, check out my student James Bell on my channel he uses doubles (although the crusade was removed) he actually doubles the speed of most 'respectable' double bass players by using back and forth motions on the ball of his foot (heel up) giving him very fast doubles.
