@LyndonTCorbett There's no shame in asking such a question. Just because you don't work behind a bar doesn't mean you can't be an experienced shot puller yourself. If someone makes fun of you it's out of their own ignorance.
My answer would be that multiple groups come in handy when there are multiple baristas working the machine. Oftentimes only one group gets used because there's only one barista on that shift. Here in NYC I regularly see two baristas on a 3 or 4 group machine.

Let me first state that I have become an espresso fanatic! Having just come back from Rome, I enjoy a great cappuccino when I can get it. I don't understand why all shops have 2/3/4 groups yet only one of the groups gets used. Where can one go without looking like a total noob and not get made fun of for asking such questions. As mentioned, I've become obsessed with this culture.
I've watched every video & my mouth is watering. Good thing I have a decent shop here in Kitchener (Matter Of Taste)
