Artichokes are great! I like mine boiled (20 mins in a bowl of water in the microwave). I like mine plain, but I have a friend who eats them with hummus (which will give you some protein and healthy fat).

I like sweet potatoes when they are cooked like baked potatoes, mashed up a bit, and with a little butter. They are very sweet naturally.

oo I have the same problem with potatoes. Though, if you want to try some delicious, but healthy mashed potatoes, make it with red potatoes, but leave on the skin. It adds a great flavor and is also the healthiest part of the potato. :)
