Is the sooji flour optional for those who have a sensitivity to gluten? Nice video by the way. Also, is this dish Gujarati? If so, it never ceases to amaze me how rich and varied the vegetarian options are in that state (and across India in general).

This is cool. There's a vietnamese item that looks similar to this, called as Banh Xeo, or in English - Vietnamese Crepes. Once the batter is poured into a sizzling hot pan, you want to pick up the pan and swirl the batter to coat the entire bottom of the pan to make it round. As the crepes cook, the sides are lightly oiled like you would do to a dosa cooking on a tawa. Do you think that can be done with this Besan batter?

@emvothuong : We are sure it can be done but the batter will have to be thinner so it can spread easily.

The puda cook really fast so it would have to be a vegetable that either cooks fast or can be eaten raw.
