When it comes to food that's leftover on trays across campus, St. Olaf College's philosophy is simple: waste not. Rather than being dumped in a landfill, the four tons of food waste produced on the Hill each week is turned into compost that is used in gardens all across campus.
See how leftover food travels from the plate to the composter to the garden, where it nurtures the produce that ends up back on the plate.
