【材料】:帶骨雞胸肉2只、蛋黃2個、九層塔1把、辣豆腐乳4塊、地瓜粉2杯、醬油6大匙、辣豆腐乳湯汁4大匙、糖4大匙、酒4大匙、胡椒鹽2大匙、五香粉1/2小匙、胡­椒粉1/4小匙、蒜泥1/2小匙、香蒜粉適量
【做法】:
1、把雞胸肉剁成可以一口吃的小塊,加入米酒、蒜末、五香粉、胡椒粉、醬油、糖拌勻放入冰箱,醃漬一小時。
2、打一顆蛋黃,放入醃漬好的雞胸肉中。
3、把醃好的鹽酥雞,沾適量地瓜粉,靜置1-2分鐘等反潮。
4、起160度的油鍋,把沾好粉的鹽酥雞,放入鍋中油炸等雞塊浮起呈金黃色狀後,放入九層塔再改大火,此時先將鹽酥雞撈起瀝油。
5、油鍋轉大火,燒至八分熱時,再把剛撈起的鹽酥雞,回鍋炸一次,約10秒後即可撈起;再撒上胡椒鹽,就完成道地小吃鹽酥雞。
