Linda's Basic Roasted Fresh Salsa:
8 Roma Tomatoes, washed and dried
6 Serrano Chiles (stems removed) washed and dried
1 bunch of Cilantro, washed, dried, trimmed
1/4 White onion, just chopped in two
1-2 Garlic Cloves
Salt to taste
On a comal or cast iron skillet, heat to medium high. Place tomatoes and chiles on the comal and cook them until burned and black. Keep turning with tongs until charred on all sides. Once cooked, put all, including the charred scraps, into a blender and add the cilantro, onion, garlic and salt. Cover and blend until almost smooth. If it is difficult at first to blend, simply crush the tomatoes with the tongs to get the juices flowing. Enjoy!

Puerto Vallarta is the most popular tourist destination on Mexico's west coast. It is no surprise that people choose to purchase a second home or move to the city, permanently. And, many residents find themselves hosting more get togethers.
"One of the best things about Puerto Vallarta is the entertaining," says Linda Kennedy de Espinosa, Hostess, Cook and Timothy Real Estate Group Agent, "Everybody knows when you move to Vallarta, everyone wants to visit, you have to keep a calendar of who is going to be staying at your beautiful home like Villa Bahia."
She is serving her guests huitlacoche with requeson quesadillas and fresh salsa. She tells her guests to enjoy themselves.
"My husband and I moved here in November 2010," says Kim Altman, a full-time resident, "We didn't really know too many people, but we started going to some events, got to know some of the expats and it just mushrooms, there's just so much to do and there are so many fun people to play with."
Most expats are open to new friendships and all new comers are made to feel welcome. Life in PV is super casual and throwing an informal party is easy. Linda shares one simple snack recipe.
"Salsa is imperative at any meal in Mexico," says Linda, "Especially in Puerto Vallarta, these are the main ingredients to start a basic salsa, tomatoes, onions, serrano chiles, cilantro, garlic and salt but in addition you can add mango, avocado, black beans, corn, there's an array of different ways to make salsa, because year-round 90 percent of the ingredients are fresh and available."
Linda starts by placing the tomatoes and chiles in a hot skillet. "You want to burn the tomatoes and the chiles, you want black, black, some people don't enjoy using the black skins in their salsa, I do, that's the whole reason, in my opinion to do this."
While the tomatoes and chiles are roasting she dices the onion, cilantro and garlic. Once the chiles are done she cuts off the stems. She then uses a blender or a food processor.
"We are putting in the grilled tomatoes, and you want to pick up all the black stuff out of the pan, because as I said, it makes it have this great smoky, earthy flavor, so this is my favorite preparation instead of boiling the tomatoes and the chiles, add the grilled chiles, a handful of cilantro, very casual, no measuring here, a little more than a quarter of an onion, and a big garlic clove, I'm going to throw this baby on the blender with a little bit of salt and mix thoroughly."
After several minutes, you have fresh salsa.
