    What a shame... so much artichoke wasted! However, if you're actually going to use the hearts, then I suppose this is the way to go.

    Just picking the leaves off a steamed artichoke is my favorite way to enjoy them :-)

    Jeez everyone! Some recipes can only use the hearts, but it doesn't have to be wasteful; do what Julia Child did and use any scraps (like the leaves) to make vegetable stock. Artichokes would be great for that! Or steam them separately. Use your imagination for goodness' sake, and don't be so judgmental!

    Who are you?? Certainly not a chef! This was appalling to watch. I feel like I just witnessed a hit and run! What a waste of a beautiful food. Shame on you. Get this thing off of YouTube now before some unsuspecting person who has no idea of what to do with an artichoke watches it and does the same psychotic thing that you just did! O-M-G!!!!!

    My understanding, artichoke hearts are taken from the baby artichokes (3 inch ish) before the choke is formed. At that time extracting the heart is very simple, 4 small artichokes can be processed per minute, and should be placed immediately in a water/vinegar bath to prevent discoloration. A greater percentage of the small artichoke is edible. An artichoke plant only produces 4-6 large commercial artichokes a season, the remaining artichokes are ideal to pick early for artichoke hearts.
