  • My recommendation is that you go to some of the smaller mom-and-pop places. If you can't see the grill from the counter, it is probably not gonna be good. Watch them make some before you order. Do they use a large spatula and continue chopping the steak as they cook? If yes - good. Is the povalone fully melted in with the meat? If yes - good. Is the meat dripping when they put it on the bread? If yes - bad. The bread is gonna get soggy before you finish. I hope you find better places.

  • Genos and pats are good but more for the tourist. Chinks Steaks is my favorite

  • @Kyles45Angel We've heard good things about Chinks Steaks. We'll have to give them a try next time we're in Philly!

  • Not sure why it's so hard to make a cheese steak in Texas this is one of the easy made sandwich.

  • Also, each steak is different depending on the region. In north Philly and Germantown, you gotta chop the meat fine while it's cooking, throw those slices of cheese on there. In the Northeast they don't chop it as much. In Roxborough they toast the bread. I personally get mine with mayo, pickles, hots, mustard, ketchup and a bit of hot sauce if I'm feeling freaky and no toasted bun. Witout for me (no onions). Everyone is different.

    One thing that makes all cheesteaks great is the Amoroso bread!

  • Cheese Wiz is a south philly thing. Anywhere else especially in north, It's real American white or Provolone. Pat and Genos is touristy. I mean, yeah it's a tradition in South Philly, but I know people who have lived in Philly their entire lives and never had one from there. I was one of those people until last year. Paganos is the shit in Olney. Depending on which Papi store you go to (Papi is philly speak for any cornerstore because most are owned by Dominicans) you can hit bank.

  • Okay, I did a Wikipedia search on Philly Cheesesteak and learned some interesting things. I was correct that the meat is "scrambled" on the grill and that provalone was first on the scene and should be melted into the meat. It appears that a lot of people like cheese wiz. I personally think it is cheesesteak abuse. They call it fast food - in the same catagory as McDonald's - No. To me it is an art. Also note the type of bread, "Amoroso". This may or may not be why a real one won't get soggy.

  • I don't know if it is still there or not, but there was, and hopefully still is, an excellent place right by the Franklin Institute. They make/made the best I've ever had. I am a Philly cheesesteak connoisseur :-) I've seen a few videos on both Pat's and Geno's and I would walk out of both of them without eating or paying for that junk if they put it in front of me. I've done it before in more than one place and I'll probably do it it again.
