【孔雀烏魚子】
材料 / 烏魚子 100g、紫菜 1張、花枝漿 適量、蒜苗 2支、巴西里 適量、苜蓿芽 適量、白蘿蔔 半條
調味料 / 酒 適量
做法:
1、烏魚子淋上米酒或高梁去薄膜,於乾鍋中略煎出香氣備用。
2、紫菜攤開抹上一層薄薄的花枝漿,將烏魚子包捲起來,外層包裹上剩餘花枝漿,入鍋炸至表面金黃撈起。
3、蒜苗切片圍著苜蓿芽擺於盤中,將炸好的烏魚子切片,平擺於苜蓿芽上,蘿蔔切片擺盤,中間點綴巴西里即可。

【烏魚子福捲】
材料 / 素烏魚子 80g、白蘿蔔 半條、蒜苗 1支、芝麻 少許、沙拉 少許、潤餅皮 2張、苜蓿芽 適量
做法:
1、素烏魚子切0.5公分四方長條;潤餅皮切長約10公分,寬7公分長方形狀;白蘿蔔切與烏魚子等長條厚片,蒜苗切片,備用。
2、剩餘潤餅皮炸成酥脆狀,備用。
3、潤餅皮攤開中間擺入一條素烏魚子條,白蘿蔔厚片各夾兩邊,烏魚子上放蒜片、苜蓿芽、灑上白芝麻。
4、沙拉擠在封口處,捲起潤餅皮成福捲,斜切成段重疊擺盤,炸好的潤餅皮擺於盤中,即可。
