Tuna "In the style of Provence"? Chef Savage makes his nod to the legendary dishes of Provence, France with his head-on smashing of East-meets-West in this simple Tuna dish.

"Provencal" refers to foods that mimic the style and basic ingredients of the region: olive oil (not butter), fresh vegetables and seafood (lots of anchovies and cod). Today, Chef Savage is using sushi-grade Ahi instead of the standard seafood of Provence.

This dish is the perfect example of Chef's cooking style: take tradition and make it your own by mixing techniques and cultures in your recipes for something completely new and exciting!
