Thank you for posting your videos. It helps to watch how it is done. I have everything I need except for the raw milk, but I have farmers close by so that is not a problem. I will hopefully try this soon.

can someone tell me if it's possible to store the cheese without wax, at least for the first weeks? In that case, how would one store it? Do you cover it with something or would it be wrong to not use wax from the very beginning?

@carlshere - Please I would love to see an expert at work, I to do cured meats and would love to learn from a Pro!

Thank you so much for putting this great video together. Looking forward to seeing you produce other types of cheeses.

Very very nice, thank you for taking the time to share.

Thank you. You helped restore my faith in mankind...and clearly you are an EXPERT cheese maker. I'm an expert in Salumi and I guess I should "give back" by posting a vid of my own - many thanks again

Very nice. Thank you!
Who cares about his arms being hairy? All I know is this guy, put in lots of effort making this video, the process/steps/methods is what we concern and all it is about, nothing can be better than making your own cheese than buying one, can't keep your cheese from going bad? then share it with others! And the only thing you do to those who shares, like "khouryalaa" is to be thankful and stop whinning!
