While we don't exactly eat the yellow stuff, we just boil the crabs whole and then take it apart. We find that when the yellow stuff is cooked inside the crab, it imparts even more flavor to the crab meat itself.
Sure your fingers are gonna stink afterwards, but that's easy to deal with. Rinse hands with water, rub your hands with a lemon peel to extract the fragrant citrus oils and make sure to get the oils under your fingernails. Then simply wash hands again with Irish Spring soap. Easy.
@komjong That "gunk" in the middle is not the crab's eggs, those are male crabs he's cleaning, eggs of a female dungie is orange. the "gunk" is refered to be "crab butter" which is tasty but high in cholesterol and i would'nt want to eat a steady diet of it. Your viewpoint on white people was narrowminded and pretty stupid. People of all races eat & enjoy crab and cooking it in ways they like to eat.
That "gunk" in the middle are the eggs which in many peoples opinion are one of the tastiest parts of the crab. In Korea we marinate that in soy sauce. Can't believe you threw it away. White people don't know how to eat and enjoy crab. When you buy champagne you probably keep the cork to sniff and throw away the bubbly also.
Anyone that likes fresh food... All Asian Cuisine will clean crabs live... Many dishes like Black Pepper and Chilli Crab won't work with a pre-boiled crab!
Not sure why people like "Crab Butter" It's toxic, if they actually researched the anatomy of a crab, they would know that the "Crab Butter" is really the pancreas of the crab. Just like any other animal that has a pancreas, any toxic consumed dwells in that. So be my guessed and enjoy that "Crab Butter" Doing more harm to you then you think.
